Recipe: Apple-Banana Pancakes

These non-flour "pancakes" are so delicious and sweet that no condiments are required! As soon as I tasted them I thought "Wow, kids would LOVE these, WITHOUT syrup!"...and then seeing my husband's face made me realizes he loved them too! (Although to be fair, he likes a lot of kiddie stuff!). The recipe was super easy and adapted from the recipe below:

Apple-Banana Pancakes

What I did:

  1. 2 eggs

  2. 2 bananas, mashed

  3. 1 peeled apple, diced small

  4. 2 tbs almond butter

  5. 1 1/2 tsp cinnamon

  6. oil for cooking pancakes

1. Mix together the above ingredients (oil excluded). I used my mini food-processor to blend it to a nice smooth consistency.

2. Heat oil in a non-stick pan or on an electric griddle.

3. Spoon "batter" onto grill and cook at medium-high heat. I cooked mine for a nice long while so that the middles were cooked all the way through.

Enjoy with fresh fruit, honey, syrup, or nothing at all!

This recipe is also vegetarian, lactose-free, gluten-free and paleo.
